Lei Sha Yuan is a traditional bean paste stuffed dessert popular in Shanghai. It is a kind of dumpling. It was created in the Sanpailou area of Shanghai in the late Qing Dynasty. It is one of the famous flavors of Shanghai Qiaojiazha Restaurant .
Introduction
An old lady surnamed Lei in the Sanpailou area of Shanghai created a method of rolling dry powder on the surface of the cooked glutinous rice balls in order to make the glutinous rice balls easier to carry and store. The most famous Qiaojiazha dim sum shop for making Leishayuan uses Chongming County Dahongpao red beans, boiled and ground into sand, dried in the sun to form a purple-red powder, and then wrapped with various fillings such as fresh meat, bean paste or sesame seeds. The glutinous rice dumpling of the heart is cooked, drained, and rolled with a layer of bean paste powder. [2]
